A week of salads

I love salads — all kinds of salad. I knew it was going to be a good week last week when it started with an invitation to the Wesley Women’s monthly luncheon April 2. Joe Ann Vermillion, a member, called and asked if I would like to come. They were going to have all kinds of salad. Of course, you bet, I’ll be there.

And there were all kinds of salad — from your traditional lettuce and tomato to broccoli and even a shrimp salad. There were also baked potatoes with all kinds of toppings — including freshly fried bacon bits.

For dessert, there were cookies and individual sponge cakes with fruit. And then The Rejoicers provided the program for the meeting. I love hearing them sing southern gospel. Ahh, a good meal and good entertainment.

Of course, Maundy Thursday was the date for the annual Ladies’ Holy Week Salad Luncheon. I certainly wasn’t disappointed at the variety of salads on hand. I can’t even tell you what all I had but I can tell you they were all really, really good. Kevin Harvison, our photographer, went with me. He was concerned we might choose the wrong line to get in for our salads. I assured him no matter which of the four lines we chose, we would get good food.

I was right. I even got one of Evelyn Lienhard’s butter cookies with the yummy icing. I’ve written about her cookies before because I remember them so distinctively from when the Lienhards had Massey’s Bakery.

Thursday, I sat and quietly took tiny bites of my cookie and hummed a little song of happiness. Another time of good food, awesome singing and a wonderful speaker.

My week was going pretty well for good food. Just when I thought it couldn’t get better, it did.

Friday, we had our luncheon here at the newspaper. There were lots of salads, meats, cheese and vegetable trays, side dishes and desserts. I love a good cheese tray, especially if there’s pepper jack cheese involved. And olives? Well, it’s a good idea to not even let me near olives. I’ll eat way more than my share. The salads included a veggie tray with celery, broccoli, cauliflower, tiny tomatoes and carrots. I felt like telling everyone behind me to just move away and let me have the entire tray. But that would have been just plain old rude. So I didn’t take all the veggies. I was polite and let others have some too.

We also had taco salad, cornbread salad and a lot more than I can’t recall at this time. I brought tuna salad, which I do every time we have a potluck meal.

There were so many different kinds of foods, I lost count. My plate was piled high but I wasn’t embarrassed. Everyone else had lots of stuff to eat on their plates too. We sat at our desks and munched away. Most of us had seconds. It was all just too good to have once. We had to have more.

Yes, it was a great week for salads. I love a good eating meeting and last week I had my share. Talk about smiling a lot.
